Watermelon Cooler Cocktail Recipe with Fresh Mint

There are three important qualities in a summer libation: refreshing, refreshing, and refreshing. You can add a shot of vodka to these coolers to give them a kick, or just enjoy the sweet, clean, summery taste of watermelon, lime, and mint.

Serves 4

Ingredients:

One 3-pound seedless watermelon, peeled, cubed, and frozen
1 cup club soda
4 ounces vodka (optional)
1/4 cup fresh lime juice
2 tablespoons coarsely chopped fresh mint, plus 4 small sprigs for garnish
8 to 10 ice cubes
1/2 lime, cut into 4 thin rounds

Directions:

  1. In a blender, combine the frozen watermelon, club soda, vodka (if using), lime juice, mint, and ice cubes and blend until smooth.
  2. Divide the watermelon mixture among 4 wineglasses. Garnish each cooler with a mint sprig and a lime slice and serve immediately.
