Vegan and Gluten-Free Teff Bread Recipe

Teff is one of the newest ancient grains to pop up in health food circles. It is known as the foundation to the traditional Ethiopian bread, injera, and packs plenty of fiber and protein. Teff has a mild taste and in this teff bread recipe, it supports a gluten free, vegan bread that is moist, dense and completely guilt-free. Enjoy!

Vegan and Gluten Free Teff Bread

Makes 1 loaf for about 15 slices

Wet:

Directions

Whisk together 1 packet of yeast with 1 1/2 cup lukewarm water in a small book. Set aside for at few minutes. In a bowl, sift together the dry ingredients. And in a larger, separate bowl, whisk together the flax eggs with the oil, apple cider vinegar and maple syrup. Add the dry ingredients to the wet ingredients and stir until smooth. Pour the mixture into a greased bread tin.

Cover with a moist towel and set in a warm place to rise for about one hour. After 45 minutes, preheat the oven to 375 degrees Fahrenheit. Bake for 55-60 minutes. Remove, let sit to cool, and eat warm or at room temperature.
