This warm and flavorful banana bread recipe is sure to hit the spot.

Organic bananas are one of those inexpensive fruits that I always have around. I love them, my husband loves them, and my two cocker spaniels just can’t get enough. I add them to my granola in the morning and enjoy peanut butter and banana sandwiches for lunch. But I don’t love the flavor once they turn brown and mushy. In fact, they gross me out. Sometimes I’ll put them in the freezer to add to smoothies later, but how many frozen bananas do you really need? That’s where this banana bread recipe comes in. It’s simple, yummy, and it puts all of my over ripe bananas to work in a recipe that’s downright addictive.

If you’ve ever had dry banana bread then you know how unappealing it can be. It’s worse than mushy bananas. But this recipe uses staples that you already have on hand to prepare a soft, moist treat for breakfast or dessert. I sometimes slather cream cheese on my banana bread but my husband eats it bare. When it’s cold outside and you need something to brighten your day, this banana bread comes in handy.

Choose high quality ingredients for this recipe. That is–organic butter, eggs and so forth. While this recipe is certainly a treat, it’s made much healthier when hormones, antibiotics, GMOs, and additives aren’t included. The less mashed your bananas, the more likely you’ll find little chunks of bananas in your bread, which can also be yummy. This recipe is also a great hostess gift or a way to lift a friend’s spirits if they’re going through a negative time.

This recipe is a good way to take a no waste perspective in the kitchen. It’s one of the things I’m working on this year in an effort to save money and save the planet. I’m trying to find recipes that allow me to avoid unnecessary waste in the kitchen. When I see something is about to go bad in the kitchen, I either freeze it or find another use for it. It makes me feel like a pioneer woman.

Banana Bread Recipe Straight From the Pantry


Makes one loaf

Method

1. Preheat oven to 350 degrees F and prepare a 4 x 8-inch loaf pan.

2. Combine melted butter and mashed bananas.

3. Add in salt and baking powder along with sucanat, egg, and vanilla extract. Mix in flour gradually.

4. Add to a loaf pan. Bake for 60 minutes and then check to see if a toothpick comes out clean. If not, bake ten more minutes.

5. Let cool completely on a wire rack. Release the banana bread from the loaf pan and serve. This keeps for 3-4 days wrapped in foil, if you don’t indulge before then.
