In this recipe cauliflower gets a more festive take on regular oil and salt roasting. The addition of miso, soy sauce, vinegar, lime, and herbs perfectly combines savory, sweet, and sour all in one bite.

Note: If you are sensitive to gluten, make sure you purchase miso paste and soy sauce that are gluten-free, as some versions of the two may contain gluten. Meanwhile, if you aren’t a big fan of cilantro, parsley will do just fine. Enjoy!

Miso Roasted Cauliflower

Preheat the oven to 425 degrees Fahrenheit.

Grease a baking sheet lightly with olive oil. In a small bowl, whisk together the miso paste, olive oil, Bragg’s, vinegar, maple syrup, nutritional yeast, lime juice, red pepper flakes, and black pepper.

Place the cauliflower florets in a large bowl and drizzle the miso sauce. Use clean hands or spatulas to toss the mixture so that the cauliflower is well coated with the sauce.

Spread the cauliflower florets into a single layer on the baking sheet and place the sheet into the oven. Cook for 25 to 30 minutes. For the last ten minutes, keep the oven door slightly ajar to allow humidity to escape. This ensures that the cauliflower take on a delicious crispness.

Serve immediately with a garnish of cilantro and a sprinkle of extra nutritional yeast. Enjoy!
