These St. Patrick’s Day Recipes Are More Fun Than Traditional

We think it’s time for some non-traditional St. Patrick’s Day recipes. It may be barely spring but, if you ask us, any time is a good time to put some green on your plate. Who doesn’t love this earthy jewel tone? Oh, and green foods just so happen to right up there with purple foods in terms of health, so pile ’em up!

These green recipes are festive enough to set the scene for an unapologetic straight up St. Patty’s Day feast but they’re subtle enough (no green food dye here) if you just want to green up your weekend meal.

Be sure to make enough for leftovers, and take full advantage of the spring produce that’s starting to appear on market stalls.

Why We Opt for St. Patrick’s Day Recipes off the Green Path

Many people serve up traditional Irish fare, like corned beef (or crispy smashed potatoes) and cabbage (if you need help in the cabbage department, learn the best way to cook cabbage here), for Saint Patrick’s Day. Sure, that’s definitely an option, but we prefer these nutrition-abundant, vibrant dishes — that just so happen to be meatless.

Easy St. Patrick’s Day Recipes: The Mains

First thing to add to your St. Patrick’s Day menu is this tasty, seasonal spring pea pasta with brain-supporting lion’s mane mushrooms. You’ve probably heard of these neuro-powerhouses, but maybe you’ve been hesitant to try them (they’re a little funky looking). No worries, trained chef and wellness expert Laura Klein shows you how in a step-by-step video.

Green peas and mint are the verdant stars of this pasta while lion’s mane “beefs” it up with a meatiness factor. A shaving of fresh Parmesan adds a hint of nuttiness and umami.

Next up, a vegetarian tempeh reuben recipe. Reubens are tasty, there’s no doubt about it, but they’re also among the heartiest of sandwiches out there and can leave you feeling less than St. Patty’s Day party-ready.

Our version is made with tempeh, which works great as a corned beef substitute and is packed with something no meat can claim — fiber! Not only that, it’s fermented (as is the sauerkraut) which means it’s good for your gut for a tastebud and feelgood win. If you wish, you can easily sub the cheese out for vegan cheese to make it fully plant-based.

This next recipe might not be what you think of when you think of traditional St. Patrick’s Day fare, but again, we’re bringing in the greens (and nutrients) with spinach in this spinach and feta frittata.

In Italy, a frittata is often served for lunch or dinner, but we like this one just as much at breakfast, especially because once it goes into the oven, it’s fairly hands-off.

Go for the individually-sized ones baked in muffin cups for a yummy (and let’s face it, fun) addition to your work lunchbox!

St. Patrick’s Day Drink and Sweets Recipes

When it comes to sips, you can always go for green beer, especially if it’s naturally green. But if you’re green-drink curious, we have a few more interesting options for you to try. Some could definitely pass as desserts.

A green smoothie offers an energetic and morning or afternoon boost that’s full of good stuff. This recipe combines almond milk, avocado, easily digestible pea protein and spinach for a tasty smoothie that’s bright green and perfectly festive. You might want to make a second tomorrow to add some nutrients to counterbalance all that Irish stout you’ll be drinking.

The next green smoothie recipe happens to be an OA favorite, maybe because one drinks like a milkshake. Yes, please! This thick slurpable masterpiece is loaded with the goods. And by goods I mean antioxidant-rich mint, spinach, collagen, and cocoa nibs to add a surprising chocolatey crunch factor.
