At Christmastime, it’s hard to avoid those boxes of delicious clementines, just begging to be slipped into everyone’s holiday stocking. But while they’re delcious eaten simply out of hand, they’re also a great addition to many sweet and savory recipes. Consider these seedless delights — or any other member of the mandarin family — in some of your meatless recipes this week. Just in time for your holiday parties, our minty clementine infused vodka is the perfect spirit to have on-hand for holiday mixed drinks! This flavorful vodka is perfect mixed simply with seltzer or soda water, for a fresh and tasty cocktail.

As a first course, the fresh flavors of this clementine-jicama salad will instantly brighten up your winter table. Lime juice, garlic, cilantro and feta tie together the sweet clementines, bursting with juice, and crisp, crunchy jicama. All of the elements of this salad can be prepared ahead of time and tied together just before serving, for the perfect dinner party appetizer.

Clementines can feature in the main dish of your table as well! One option is a clementine and tofu stir fry. An Asian-influenced sauce offers balance for the sweet clementines. Green asparagus and tofu stand in for the traditional beef in this delicious vegan version of the Chinese takeout classic orange beef.

Make your own teriyaki sauce for this creative seitan and broccolini with clementine teriyaki. Bitter broccolini are great with this sweet sauce that has none of the artificial flavor of some store-bought brands. You can also use it in place of other teriyaki sauces in your favorite recipes.
