Meatless Monday Roundup: 4 Feta Recipes

Feta cheese is fantastically flavorful, which is just one of the reasons we love including it in Meatless Monday meals. After all, when you’re assembling a quick and easy vegetarian meal, the best ally you can have is a flavorful ingredient! And feta recipes are nothing if not full of flavor.

With Meatless Monday on the brain, we’ve scoured the internet for the best in meatless feta recipes… and we’ve found quite a few! We’re ready to share some of our very favorites this week.

The first is a feta classic. The spanakopita depicted above is easy to make and an ideal recipe for Meatless Monday. Spanakopita combines iron-rich spinach with flavorful feta, all of which is bound together in a flaky phyllo crust. Take a vote with your family, but we’re pretty sure that this Greek tradition will be getting a unanimous “yes!”

As the weather starts to get nicer, you may be on the lookout for lighter fare. Our black bean and feta quesadillas have quite a few things going for them! Not only are they delicious — not surprising given the flavorful combination of black beans, feta, chiles and corn — but they’re also gluten-free. What more could you ask for when it comes to delicious Meatless Monday fare?

Feta also goes great with pasta, and because it’s so strong in flavor, it doesn’t take much to turn plain noodles into something special. Take this brown butter pasta and kale recipe. Farfalle is tossed with kale, brown butter and raisins: a fantastic combination of savory and sweet. A touch of tang with the sprinkling of feta over the top, and dinner is served.

Feta also pairs particularly well with potatoes, and the new potatoes that are just becoming available are a truly perfect match. Our Mediterranean-inspired potato salad combines new potatoes, artichokes, olives and feta for a flavorful — vegetarian! — dish. Feta unites the ingredients and adds a touch of richness that really makes this salad shine.
